
The pigment Anthocyanins, is what gives nature its vibrant color. The leaves turning red, yellow, and orange as they change color in fall and the colorful array in the produce isle. This is the same pigment that coined the french and their red wine as the 'french paradox' . It is Anthocyanins that are responsible for the pink, blue, purple color in our fruits and vegetables. The richer and deeper the amount of color, the higher concentration of Anthocyanins present.
